Coriander Cashew Chicken
For the Marinade
Chicken – 1/4 kg
Coriander leaves – 1/4 cup
Lemon – 1/2 piece
Green Chilies – 3 -4 long
Salt to taste
Cloves – 2 -3
Cinnamon – 2″
Cardamon – 2
Oil – 2 tsp
Onions – 1 medium
Ginger Garlic paste – 1 tsp
Cashew – 1/4 Cup
Coriander powder – 1 tsp
How to make Coriander Cashew Chicken
Wash the chicken and cut into equal pieces. Make a paste of coriander leaves along with green chilies. In a bowl, take the chicken along with coriander paste, lemon juice, turmeric and salt. Let it marinade for 30 mins.
Then heat a non stick pan with oil. Add all the whole spices. Then add the onions, followed by the ginger garlic paste.
Once the onions turn colour, add chicken marinade along with the cashew paste, coriander powder.
Simmer and cook till it’s almost well done.
Now add a cup of water and bring to boil, making sure the bottom doesn’t get burnt.
Simmer and cook covered. It gets done by 15 – 20 mins.
Serve as a starter
This is not a dry dish. Increase the spice as required.
