Brinjal Butter Masala
Ingredients Needed:
Brinjal - 250 gms
Onions - 1 medium
Tomato - 2 nos
Ginger Garlic paste - 1 tsp
Butter - 2 tbsp
Salt to taste
Red Chili powder - 1 tsp
Green Chilies - 2 -3 nos
Garam Masala - 1/2 tsp
Cashew paste from 10 whole
Coriander leaves
How to make Brinjal Butter Masala
Soak the cashews in hot water and make a paste.
Chop and boil the onions, tomato till soft. Cool and then make a puree of the onion and tomato.
Heat a non stick pan with butter, saute chopped green chilies, ginger garlic paste. Cook for few mins.
Chop the brinjals as long pieces as julienne. When the green chilies and ginger garlic is cooked, add the brinjal pieces.
Add turmeric, salt and red chili powder. Simmer and cook well. Simmer and cook till the brinjals are cooked.
Now add the onion tomato paste and bring to boil. Next add the cashew paste and mix well. Add a cup of water and bring to boil.
Add garam masala and when the gravy is cooked well, add coriander leaves and switch off.
Serve with rotis.
