For the second day of cooking with Root Vegetable, its another baked dish. Sweet Potatoes are something I love eating just boiled and as a kid, mixed with loads of sugar.
Now I have passed the stage of wanting to eat this with sugar and can just enjoy the boiled vegetable as such. Recently while shopping, Hubby dear saw these and reminded me that its been a long time since we had this and we picked up few.
We enjoyed some as boiled for snack and rest was still chilling out. It was my luck that I remembered these and thought I should make something with it. That’s when I saw this baked wedges from Gayathri in Instagram.
I don’t think I have enjoyed other social media as much as I have been enjoying playing around in Instagram. It’s a simple picture share and I never bother about linking to the original recipe or so. While I have been so obsessed about Menu planning and have crossed over 3K recipes, only my Instagram account says how much I repeat the dishes over the week!My family seem to be obsessed with same kind of dishes offlate.
Anyway these wedges were something I had to make. I south Indianised the wedges by spicing it with Sambar podi. There is that saying about removing the person from a place, yet never remove the place from the person. Though this is not apt, its something of the same case. I do end up using sambar podi for quite some dishes apart from, you guessed it right, Sambar!

Baked Sweet Potato Wedges
Baked Sweet Potato Wedges are quick to make snack, baked in oven for 30 mins and has a twist spiced with sambar podi.
So we use both sambar podi and red chili powder for spicing this wedges.
Peel the raw sweet potatoes and cut into wedges, toss in oil along with the spiced powder.
Arrange the wedges in the baking tray and bake for 30 mins at 180C.
