Apollo Fish Fry is a popular Hyderabadi special boneless basa fish starter, we then stir-fry in curry leaves and green chili tempering. You can serve this spicy starter as a delicious finger food, as its tossed in a seasoned masala.
This is a boneless starter with fish, we temper with spicy fresh herbs. Kids simply loved this so much that we had to repeat it a couple of times.

Ingredients
This is a two step fish starter you can plan again to make for a delicious party snack.
For the Fish Marinade
Basa Fish - I have used boneless basa fish to make this starter dish.
Ginger Garlic paste - We use ginger garlic paste in the marinade. This makes the dish very tasty.
Spice powders - I have used only turmeric powder and red chili powder in the marinade.
Coating - The coating is done using egg, all purpose flour and cornflour.
Lemon Juice - The lemon juice adds a good balance to the fried fish.
For the Saute
Fresh herbs - We use finely chopped ginger, garlic along with green chilies. This adds a wonderful balance to the saute. The final tempering with curry leaves is the highlight.
Spices - I have used ground red chili paste, coriander powder, crushed pepper powder that makes it very spicy.
Sauces - Green chili paste, Soya Sauce adds a wonderful taste to the saute after you toss it.
Curds / Yogurt - Curds add a balance of sourness to the starter and should not be skipped.

Instructions
You can get boneless fish to make this fry. As its a deep fried fish fry, marination is very important. So make sure you marinate well before deep frying the fish.
For the Fish Marinade and Fry
Wash and slice the basa fish into 2 inch pieces.
Drain and take in a bowl. Add salt, ginger garlic paste, chili powder, turmeric powder, lemon juice, mix it well.
Then add egg, cornstarch, all-purpose flour, mix this well and deep fry on medium flame. Keep it aside.
For the fish saute
Heat oil in a pan, add chopped ginger, garlic, green chilies, curry leaves, green chili paste, coriander powder, salt, soya sauce, curds, pepper powder, chopped coriander leaves, saute this for a couple of minutes.
Next add the fried fish, toss it and squeeze in some lemon juice.
Your delicious Apollo Fish Fry is now ready to serve.
Substitutions & Variations
We use salt in two places, so make sure you know how much is added in different times.
We can use any boneless fish to make this fried fish.
You can modify by skipping yogurt and adding sauces such as soy sauce and chili sauce instead of yogurt.
Storage
We never store cooked Fish. You can always freeze it after cleaning the fish.

- 250 grams Basa Fish
- 1/2 teaspoon Salt
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Ginger Garlic
- 1 teaspoon Red Chili Powder
- 1 tablespoon Lemon Juice
