    Easy and Simple Chicken Fry

    This easy and simple chicken fry is a delicious starter with chicken boneless. You can serve this along with main course or as a starter too.

    Spicy Chicken Fry

    I know I already have way too many chicken recipes cooked in different styles like stir fried, deep fried, semi gravy and so many other ways.

    Yet, when we try a new method because we are bored to cook the same version, and it becomes a super hit with the family, I have to record it right.

    So this spicy chicken fry has been a regular one since the last few months. If you ask me whats different in this recipe, then no, nothing is changed, all the ingredients used are easily available and I must have already cooked it in different styles. Yet this is different.

    Ingredients

    For Chicken Marinade

    Chicken - We use boneless chicken chopped into bite size pieces. For the marination, you can mix salt, turmeric, chili powder to the drained chicken and keep it aside until the other ingredients get cooked.

    For the Fry

    Whole Spices - We use Shah Jeera and Bay Leaves

    Spice powders - Coriander Powder, Roasted Cumin Powder and Garam Masala is used during cooking.

    For Spice - We use both green chilies, red chili powder for the spice. This dish is quite spicy as we add both green chilies and powder as well.

    Onions and Tomatoes - We use very finely chopped onions so that it gives body to the fry. Add tomato chunks makes the fry different. We can always add as puree, however, as chunks it tastes better.

    Herbs - Curry leaves and Coriander leaves are a must for this fry. So do not skip it.

    Instructions

    For Chicken Marinade

    Wash and cut the Chicken into bite size pieces, add salt, Red Chili Powder and Turmeric Powder.
    Mix well and keep it aside. It's enough to marinate for the time you will cook the rest.

    How to make Spicy Chicken Fry 1

    To make this easy and simple chicken fry

    Heat a kadai with cooking Oil. Add Bay Leaves and Shah Jeera.
    Saute well, next add finely chopped Onions along with slit green Chilies and Curry leaves.
    Saute until the onions turn colour.

    Now add Ginger Garlic Paste and little water for the whole mixture to get soft.
    Add the chicken along with the masala. Mix everything well together and let it cook on high flame.
    Simmer and you can cover with a lid and let it cook for 5 minutes.

    How to make Spicy Chicken Fry 3

    Remove the lid, add Coriander Powder, Cumin Powder and mix well.
    Let the water that comes out evaporate.
    At this stage add finely chopped Tomato and combine everything well together.
    We don't add water to this fry. We let the chicken get cooked in the water that oozes out.

    Now add the remaining Red Chili Powder, Garam Masala and half of finely chopped coriander leaves.
    Mix well and let the water evaporate and the chicken becomes soft.

    Simmer for 5 to 7 minutes until the whole mixture becomes dry and the chicken is well coated.
    Finally garnish with finely chopped Coriander Leaves.

    Substitutions & Variations

    Cooking this along with the other ingredients without adding water makes this different from regular chicken fry.

    You can always boil the chicken ahead and make this fry.

    Instead of adding chopped tomato, you can add puree as well. However, that changes the taste.

    Equipment

    To make this easy and simple chicken fry, you will need vessels and colander to clean the chicken and drain it well.

    A wide kadai or a nonstick pan to make the fry along with a lid.

    Storage

    You can store the chicken with the marinade in the fridge and cook after few hours.

    You can always freeze it for cooking after two days. Cooked chicken will be good for over a day.

    Expert Tips

    Cut the chicken into equal portion for even cooking.

    Use only boneless for a delicious treat. Always ensure you cook the chicken in its own moisture. This makes the chicken very tender and soft.

    Ingredients

    For Chicken Marinade

    • 1 teaspoon Salt

    • 3 Green Chilies slit
    • 2 sprigs Curry leaves
    • 2 teaspoon Ginger Garlic Paste
    • 1.5 teaspoon Coriander Powder
    • 1/2 teaspoon Cumin Powder
    • 1.5 cup Tomato finely chopped
    • 2 teaspoon Red Chili Powder
    • 1/2 teaspoon Garam Masala
    • 1/2 cup Coriander Leaves finely chopped
    • Handful Coriander Leaves finely chopped for final garnish.
