Ingredients you will need for Eggfree Almond Cake
This cake uses curds, condensed milk along with sugar to replace the eggs. However, this is a eggless cake by itself. So you will need the condensed milk for the crumb.
- Almond Flour - If you don't have milled almond flour, you can easily pulse whole almonds and get the flour. Just make sure you don't pulse it for a long time, else you will end up with butter.
- Condensed Milk - This is used for the fat content of the cake and would surely not want to miss it.
- Curds - Since this is an eggless cake, you can use thick hung curds to get the right texture.
Instructions to bake ~ Step By Step Pictures
Take your whole almond in a food processor or mixer jar, pulse it a couple of times to get the flour. Make sure you don't pulse for a longer time. You will end up with almond butter.
Take the flour along with almond flour, mix well. Then add curds, along with condensed milk.
Mix well and add sugar, baking powder, baking soda and combine everything together. The batter will be thick, so slowly add milk as required to get a loose batter.
Grease a baking tray with butter and flour. Pour the batter and bake in a preheated oven at 180C for 30 minutes.
As you can see the top got slightly burnt. You can cover with a foil after baking for 25 minutes.
Substitutions to make this Eggless Almond Tea Time Cake vegan
If you want to make this completely vegan, you can use almond milk instead of milk. Add almonds to the batter as well for more richness.
