Eggless Ghee Cookies or Nei Biscuit is a popular Bakery Style biscuits available across street vendors selling tea. This is one of the delicious treats you can get off the street food that is so enjoyable.
As always I plan to bake cookies in a bunch, this time also I planned for about four different flavours. Each flavour turned out great and this Nei Biscuit was the most favorite as Hubby Dear said he remembered his childhood incident when his classmate used to give these biscuits for her birthday.

Step By Step Pictures for making Nei Biscuits
Measure and take the flours in a bowl.
Add the melted ghee, baking powder, baking soda along with cardamom powder.
Add powdered sugar and combine everything together.
Making Eggless Ghee Cookies
Now add melted ghee and make sure you rub the flour with the ghee well.
When you can hold the dough to form a fist, its ready, else you can add ghee as required.
I added another 2 tablespoon ghee to get the right consistency.
Make small balls and flatten into small discs between your palms.
Place it on a parchment paper, top each with chopped almonds.
Preheat the oven to 150 C and bake the cookies for 30 mins.

Ingredients
Ghee Biscuits Ingredients
- 1.5 cup All-Purpose flour / Maida
- 1/2 cup Besan / Gram Flour
- 1 cup Sugar powdered
- 1 teaspoon Baking Powder
- 1/4 teaspoon Baking Soda
