    Fodnicha Bhaat or Phodnicha Bhaat as it is also called is a simple dish you can make with leftover rice. This is a perfect one to carry for a Lunch box as well.

    Since rice is eaten in a majority on a daily basis, there is always a possibility of excess on hand. That’s when you will think about how you can recycle it for the next meal. In my home, if it was to be overnight, then we mostly make Ragi Sangati. Athamma said she used to make Chitrannam or Lemon Rice.

    So when I was checking out the dishes for F, I came across this interesting version of the dish made in Maharashtra and is called fodnicha bhaat / phodnicha bhaa, which literally means seasoned rice. It is a simple and quick dish to prepare and a great way to recycle leftover rice.

    As I read it is also served for breakfast. However, I packed it for Konda’s lunch and she liked it as well. The preparation is very simple and if you are making fresh rice, it might be soft and you will end up getting a clamped up dish. So leftover or dry cooked rice is best for this.

    Fodnicha Bhaat | How to make Phodnicha Bhaat

    Ingredients Needed:

    1 cup Rice
    2 tsp Cooking oil
    2 tsp Peanuts
    1/2 tsp Mustard Seeds
    1 tsp Cumin Seeds
    1 small Green Chili, finely chopped
    Few Curry leaves
    1 /2 cup Onion
    A pinch of Asafoetida
    A pinch Turmeric powder
    Salt to taste
    1 /2 tsp Red Chili Powder
    Coriander leaves for garnish

    How to make Fodnicha Bhaat
    Heat oil in a nonstick pan, add roasted peanuts. After a few minutes, add mustard and cumin seeds.
    When mustard seeds crackle, add curry leaves and green chili. Saute for a few seconds.
    Now add finely chopped onions. Then add asafoetida, turmeric powder, salt, red chili powder, and cooked rice.
    Mix well and simmer for a minute.
    Garnish with cilantro and serve.

    Ingredients

    • 1 cup Rice cooked
    • 2 tsp Cooking Oil
    • 2 tsp Peanuts
    • 1 / 2 tsp Mustard Seeds

    • 1 to 2 small Green Chili finely chopped
    • Few Curry leaves
    • 1 /2 cup Onion

      I was expecting mint rice when I read the word Fodina - but it’s different ! Wondering why it’s called do ?

      I like the addition of peanuts to the rice along with curry leaves. That must have added lit of flavour to rice. Simple and delicious rice recipe

      I did a A-Z Rice marathon previously and know how tricky it can get to find recipes for some letters. I love how this easy rice dish tastes so flavorful with simple tempering and onions

      I always have leftover rice. Seriously, I cannot live without leftovers. 🙂 This reminds me of the oggarane anna that we make with the leftover rice.Love the addition of peanuts in the rice. Yet another great pick for F valli. I still dunno how you manage mega marathon for two blogs.

      Peanuts are a great addition to this rice. The tempering reminds me of the aval upma I make for Sruti. My daughter would love this version of leftover rice.
