    How to make Paneer Tikka Pizza Homemade ~ Step by Step

    We are entering into the third week of Bake-a-thon. I was getting little worked up with all the cakes that I was baking. Infact I felt I strongly need to give it a break. The Chocolate Cake that I made on Saturday was so heavy, that I felt sleepy soon after eating it for breakfast. I was thinking I had a problem with the overdose of chocolate. Amma said the same and Daddy told me not to give them any more of such high calorie cakes.
     
    Anyway all that talk made me decide that I was better off making a pizza. Pizzas always remind me of my early days of eating out at Pizza Hut. They always keep changing their menus. Once it was Paneer Tikka Masala Pizza, then it was Amritsari Punjabi Pizza. Each time the menu got changed, I used to long for the one that was no more on the list. However the one on the menu was also interesting. So in the end I wouldn't miss much and enjoy the hot spicy pizzas.
    Imagine even on a pizza, I would love only North Indian flovours. Since I have ready shared our regular homemade pizzas, with different takes on it, there is a huge list out there, I wanted to try with the Paneer Tikka Masala. I had made it as Kabebs, so knew kids would love it on the pizzas as well. Since I was going to barbecue the paneer along with onions and capsicum, I had marinated everything together. Here I wanted to make sure each gets cooked
    properly, so cooked ahead before adding on the pizzas.
     
    I made a whole wheat pizza version and the regular ones with APF. Infact the kids loved the apf version so much that they wanted it for the next day as well. First day was Pan Pizzas, second day was thin crust hand tossed pizzas. They couldn't decide which was best.
     
    Paneer Tikka Pan Pizza
     
    Pan Pizza Dough

     

    All purpose flour / Maida - 4 cups
    Salt - 2 tsp
    Olive oil - 2 tbsp
    Instant Yeast - 2 tsp
    Sugar - 1/4 tsp
    Warm water

    In a wide bowl, take all the ingredients. Slowly add water to knead to a soft pliable dough. Transfer to a greased plain surface and knead well till you get a soft dough. Keep it covered till it doubles.

    When you are ready to bake the pizzas, pinch out balls as per your pizza size and roll out. Prick the top with a fork.

    Tomato Sauce

    Ingredients Needed:

    Olive Oil - 1 tbsp
    Tomato puree - 4 cups
    Garlic, crushed - 2 tbsp
    Red Chili flakes - 2 tbsp
    Italian Seasoning - 1 tsp
    Butter - 1 tbsp
    Salt to taste

    How to make the tomato sauce

    Make a puree of ripe tomatoes, heat a non stick pan, drizzle with olive oil, add crushed garlic, saute well.

    Then add the tomato puree, salt and red chili flakes. Cover with lid and cook on high.

    When the sauce thickens, add the Italian seasonings and butter. Keep it aside.

    Paneer Tikka Masala

    Ingredients Needed

    For the marinade

    Paneer, cubes - 2 cups
    Hung Curds -1  cup
    Salt to taste
    Ginger Garlic paste - 1 tsp
    Red Chili powder - 1 tsp
    Coriander powder -1  tsp
    Garam Masala - 1/2 tsp
    Chat Masala - 1/2 tsp
    Cumin powder - 1/2 tsp
    Kala Namak a pinch
    Turmeric powder a pinch

    Mix all the ingredients in a bowl, keep it aside for 30 mins.

    For the Masala

    Butter - 1 tbsp
    Onions, juliennes -1 cup
    Capsicum - 1 cup
    Salt to taste

    Heat a non stick pan with butter, saute onions, till tender, then add the capsicum. Cook on high till the capsicum gets cooked.

    Next all the paneer along with the marinade and simmer till the masala gets well cooked.

    For Assembling the Paneer Tikka Pizza

    Three types of Cheese - 2 cups (I used Mozzarella, Cheddar, Processed Pizza Cheese)
    Butter - 2 tbsp
    Tomato Ketchup as per requirement
    Prepared Tomato Sauce
    Paneer Tikka Masala

    How to assemble the pizzas

    Roll out the pizzas discs, prick the top with fork. Spread butter, followed by the cooked tomato sauce.

    Then add paneer tikka masala evenly on top, drizzle some tomato ketchup.

    Finally cover with cheese.

    Bake in a pre heated oven at 200 C for 20 - 25 mins.
