Kara Kuzhi Paniyaram or Masala Kuzhi Paniyaram is a Chettinad dish, popularly served for breakfast. This paniyaram is one of those really sinful dishes that you can indulge in for any meal of the day. You can serve this for any meal, though traditionally we serve for breakfast.
Today's recipe is again from Amma's dairies that have so many recipes that she has noted over many years. As I said it's my goal to make all of those at least once. Cooking from Cookbook is all about discovering recipes from Cookbooks, Dairies, and paper clippings. I seriously wish I get my paper clippings covered as well!
Anyway, this Kara Kuzhi Paniyaram is a Chettinad Special and though we have already so many versions of paniyaram done, the proportion used for this is different from the rest. Mostly leftover Idli/Dosa batter is reprocessed as Paniyarams. That is no doubt wonderful. Yet this different proportion makes the dish all the more delicious.

These masala kuzhi paniyaram recipe from scratch and once you have the base, you can make so many variations. I served these paniyaram with this Sesame Seeds Chutney
Ingredients
We make this Kuzhi Paniyaram Batter from scratch. We can make different versions depending on how we want to make. In today's recipe, I have used onions and carrots along with tempering.
For the Batter
Rice - We use par boiled or boiled rice for the base batter along with Raw rice.
Urad Dal - Urad dal is very healthy and adds required protein for the batter.
Sago - Sago or Sagubiyam is added to the batter that gives the softness, yet not sticky while making the paniyaram.
For the Masala
Onions - Finely chopped onions are added as fresh to the batter.
Carrot - The dish is made more healthy by added grated carrot and it adds nutrients and colour as well.
Tempering - We temper with curry leaves, mustard and urad dal along with chana dal.
Instructions
For the Batter
Wash, change water couple of times and soak all the ingredients for 4 hrs. Then grind to a smooth batter.
Transfer to a wide bowl, add salt and ferment for 5 to 6 hrs.
For making Masala Kuzhi Paniyaram
When ready to make the paniyaram, add finely chopped onions, grated carrots, green chilies and mix well.
Heat a pan with oil, temper with curry leaves, mustard seeds, chana dal until it splutters.
Pour this to the batter and mix well.
Heat the paniyaram pan greased with oil.
Pour small ladleful of batter into each hole.
Sprinkle oil over it and cover with lid, simmer for 5 to 7 mins.
Remove with the wooden spoon and serve with chutney.

- 3 cups Boiled Rice
- 1 cup Raw Rice
- 1/2 cup Urad dal
- 2 tbsp Sago / Sagubiyam
- 1 tsp Salt

My neighbours are from Chettinad and they make kuzhi paniyaram every once in a while. And give us some to savour as well. I love them as well as the onion chutney that aunty makes as well. Your version looks so good. I've never made them before. Now to get a paniyaram pan!

Amazing breakfast! I have never tried adding sago to the batter. This will give more spongy paniyarams. I need to try it.
