    Masala Macaroni | Desi Pasta Recipe

    Masala Macaroni or this Desi Pasta Recipe is a typical indianised way of making macaroni is onion tomato sauce. The taste is desi with very earthly taste and if you are fond of this base, you will love this macaroni.

    Masala Macaroni

    My family loves this dish and Amma always makes it at least once a week. While we have been making macaroni in different ways like this Pepper Macaroni, Spicy Tomato Macaroni with Cheese, Macroni in Tomato Sauce - Indian Style, today's version is made different with puree and that surely makes it very different.

    Ever since kids started liking this version, we have only been making this one every week. I was glad to have finally came around blogging it. This will surely Brighten your Breakfast!

    Ingredients

    Pasta - We normally use elbow pasta or macaroni for this. However, you can use any shape you have.

    For the base - Equal amount of onions and tomatoes are used in puree form to make the base sauce. If you like chunks in your pasta, go ahead add half of these finely chopped. Since kids don't like it, its best to make a puree and that adds to the sauce as well.

    Spice powders - For this fusion dish, we use red chili powder, coriander powder and along with a dash of turmeric powder. It is mostly on the spicier side.

    Herbs - For the ultimate Indianised version, you can add finely chopped coriander leaves.

    Boiling Macaroni

    Boiling the Macaroni

    In a wide vessel bring the water needed for boiling the Macaroni to a boil.
    When the water starts rolling boil, add the macaroni and add a few drops of oil so that the macaroni doesn't stick together.
    Once the macaroni is cooked, takes about 7 to 10 mins depending on the quantity.
    Drain the water, and immediately add cold water to the macaroni to prevent further cooking.

    Making the Onion Tomato Sauce

    In a wide pan, heat the oil, add the onion puree, and saute well.
    Next, add the tomato puree and cook on high until the puree is well cooked.
    Add the salt and spice powders, and cool for 5 to 7 mins on high while you keep stirring it.
    Add 1/2 cup of water and bring to a boil.

    When the water starts to boil, add the cooked macaroni and simmer until the macaroni absorbs the water and gets well cooked.
    Finally, add the coriander leaves.
    Serve hot.

    Substitutions & Variations

    If you want to make it more healthy, you can add vegetables to this.

    Use ready to use sauces for even more quick breakfast.

    Can use other pastas as well to make this Masala Macaroni.

    Equipment

    We need a wide vessel for boiling the macaroni

    A wide wok or a kadai for making the sauce.

    A colander to drain the water from the boiled macaroni.

    Storage

    We can store the cooked sauce for a couple of days in fridge.

    Boiled macaroni can also be stored for two days.

    Just before making, bring it to room temperature and assemble this dish.

    Top tip

    While boiling for this Desi Pasta Recipe, always add few drops of oil to prevent the macaroni from sticking.

    After draining, pour water on the drained pasta to prevent further cooking.
