    Nei Royyala Vepudu | How to make Prawns Ghee Roast

    Nei Royyala Vepudu or Prawns Ghee Roast is a delicious dry roast made with spices coating the prawns. The roast is cooked in ghee and gives an excellent taste and aroma to the final dish.

    Working with Prawns takes expertise, and I always leave it to Amma to handle it. All her Prawn recipes turn out great, though we don't make it that often. Her Prawn Biryani is everybody's favorite.

    When I had featured Non-Veg Thalis during the Thali BM, I made sure I included Prawns, and shared the Prawn Curry that everybody loves!

    Making the Masala Paste for Prawns Ghee Roast

    Heat a nonstick pan and dry roast the Dry Red Chilies, Cumin Seeds, and Coriander Seeds. Roast for 5 to 7 mins, remove to a plate, and allow it to cool down.
    Once cooled down, grind to a smooth paste using just enough water.

    Making the Prawns Roast

    Clean the prawns and let them drain.
    Heat a kadai with ghee, when it is hot, add the ginger garlic paste and saute well.

    Add chopped green chilies, when it cooks for a few minutes, add the drained prawns.
    Let it cook on high flame, water will come out from the prawns.
    Add salt and turmeric powder.

    How to make Prawns Ghee Roast

    After a few minutes, add the ground paste. Add the garam masala and continue cooking until the whole mixture comes together. This takes about 5 to7 mins.
    When the water evaporates and thickens, simmer and roast till all the water evaporates and coats the prawns well.

    Ingredients

    For the Masala Paste
