    Quick Fried Rice Recipe | Easy Fried Rice for Kids Lunch Box

    If you are one of those parents, who have to pack a lunch box in just about 15 to 20 mins, you are at the right spot! This goes to cooking in a short time as well. When I say cooking in the shortest time, I meant the whole meal. Of course what one considers as a meal varies from person to person. However I am talking about a situation where one has to pack a lunch box or make a quick dinner, it should be done in a short 20 to 30 mins max. These recipes are suited for that and catered in having in mind that the dish needs to be the main course or even if it's a gravy, how best to plan the rotis as well.

    I pack school lunch for my kids. While Konda eats anything I pack for her, it needs to be specific lunch for the boys as they are still fussy about what they eat. I keep varying between rice and roti. The rice that gets packed is either fried rice or pulao/biryani types. Most of which gets nicely parsed and packed.

    While a Fried Rice is simple, this version of Fried Rice is really quick, as quick as it takes just about 10 to 15 mins to get done, if you have cooked rice on hand. So the days I plan this meal is mostly when I have excess rice the previous night. You can't make this rice with just cooked rice, the rice needs to be firm.

    So leftover rice works best for this simple and easy rice.

    We are starting yet another new Edition and it is going to be BM#62. I will be doing Quick Dishes. It can be rice or roti or anything else too, only you got to manage it all under 30 mins. A meal is what I am talking about. How you manage is your wish, like you can manage with pre-cooked rotis, leftover rice or dosas or a casserole, etc.

    There are certain essential things that are always stocked to help dishes like this to happen quickly

    Homemade Ginger Garlic paste, frozen
    Green chili paste

    For day 1, I have a Quick Fried Rice that often gets packed for my boy's lunch box.

    Quick Fried Rice

    Ingredients Needed:

    Cooked Rice - 1 cup
    Onion, julienne - 1/4
    Carrot, finely diced - 2 to 3 tbsp
    Beans - 2 to 3 tbsp
    Pepper powder to taste
    Salt to taste
    Green Chili paste - 1/2 tsp (store bought is also fine)
    Soya Sauce - 1/4 tsp
    Green chilies - 1 long
    Oil - 2 tsp

    How to make Fried Rice

    If you are using the rice straight out of the fridge, MW for a minute before cooking. Fluff the rice well.

    Have all the vegetables chopped and ready.

    Heat a nonstick pan with oil. On high flame, quickly saute the onions, then add the carrots and beans. Saute well. Add salt and pepper. If using homemade green chili paste, add now. Else add the store bought chili sauce after adding the rice.

    Add the rice and mix well. Now drizzle the soya sauce and green chili sauce. combine everything and adjust for seasoning.

    Switch off the flame.

      That looks simple and easy enough to dish out in the morning rush hours and I am glad that your twins love roti & rice. My picky 14 year old haven't touched beyond lemon rice and carries a big 'NO' board for Indian style lunch box dishes.

      It is very tough for my kids to take rice to school. Unless it is a paneer gravy or chana masala, they refuse to take it for lunch. But this is such an easy one for the morning rush hour.
