Rajgira Halwa is a sweet made with Amaranth Seeds and is a popular sweet made during different festivals.
Next time you plan to make some halwa for Raksha Bandhan, this dish can surely be done. As the name says, this halwa is made just with Amaranth Flour and sugar with loads of ghee and nuts in it.
In my halwa series, I wanted to make sure I use as many whole grains and new grains as to prepare the traditional halwas. And this one is typically made during festivals in Northern India.
As I was planning on my second week, thinking halwas are super easy to make, I just procrastinated. I didn’t account for how I will get the halwas consumed. Of course, I took to my office friends, still, since a festival just passed us by, everybody was reluctant to eat so many sweets.
Finally, I had to make this halwa and it was a hurried post. I was also planning on decking up these halwas with different colours, however, everything ended up being brown.
So as part of the Indian Halwas that I am making for BM#104 Sweets & Snacks, I have Rajgira Halwa, while it's my favorite traditional Sweet in Spice your Life!

How to make Rajgira Halwa
Heat a nonstick pan with ghee and roast the amaranth flour till the color changes to light golden brown color. Remove from the flame and set aside.
Melt the sugar with water and continue cooking till it gets thick slightly.
Now add the roasted flour and mix well. Keep stirring continuously.
Add the melted ghee little by a little while stirring the mixture.
When the mixture starts leaving the sides of the pan, turn off the flame.
Sprinkle the almonds on top and serve.

- 1 cup Amaranth Flour / Rajgira Atta
- 1 cup Sugar
- 1/2 cup Ghee Melted
- 1/2 tsp Cardamom Powder
- Handful Almonds
- Water as required
