Sooji Halwa is one of the easiest sweets you can make for your Diwali Lunch or Party. This is also part of the popular street food fair on the streets of Delhi. The delicious halwa made with Rava makes any occasion special.
I made this during the Delhi Street Food I made for the Mega BM last year. It was an elaborate Street food thali, where I wanted to showcase as much street food as I could. It was during our BM#75 meet when we all met in Delhi and Vaishali also took us around the place to get us to enjoy the various street on display.
For this thali, I adapted many of the ideas from Vaishali's site and enjoy the entire thali immensely.

Step By Step Pictures for Making Delhi Street Style Sooji Halwa
Soak the saffron strands in warm water until they dissolve, keep aside.
Heat ghee in a nonstick pan, add Rava, and roast well until aromatic.
Meanwhile, in another pan bring 3.5 cups of water to a boil. When it starts rolling boil, add the sugar, and simmer it melts completely.
We need not have a string consistency, however, if the syrup is slightly thick, it is better.
When the rava is well roasted, slowly add the sugar syrup, while you continue to stir.
Cook until the entire water is absorbed.
Add the saffron and cardamom powder.
Simmer the flame and let cook till the ghee separates.
Cover and let cook for 3-4 minutes. Garnish with roasted almonds

Sooji Halwa ~ Easy Diwali Recipe
Ingredients
- 1 cup Semolina / Rava
- 1 cup Ghee
- 1 cup Sugar
- 1 teaspoon Cardamom Powder
- Few strands Saffron
- 5-6 Almonds chopped
Instructions
