    This is a side dish that I made a while ago along with Pudina rice. Both these I ended up making with the SIMP that I did couple of months back. Having this powder works out easy and simple as you have the masala ready with you, just you will have to have the vegetable sauteed and you add this masala.
    Days have been hectic, I wonder when it will be anything else. Where did those lazy, slow days went off. Or that was how it was during childhood, when you remember every minute you spent and the day seem too long. Now one day merges into another without you even knowing it. End of the day when you felt you did so much, now most times I don't even remember what worthwhile I did!
    Anyway this banter would go on for ever, I might as well talk about this simple dish.

     

    Aloo Spicy Roast

    Ingredients Needed

    Potatoes - 3 -4 medium
    Mustard, Urad Dal - 1 tsp
    Curry leaves few
    SIMP - 2 -3 tsp
    Oil - 2 -3 tsp
    Salt to taste

    How to make the Spicy Aloo Roast

    Wash and peel the potatoes. Chop into fine pieces.

    In a non stick pan, add oil temper with Mustard, Urad dal, curry leaves. Then add the chopped potatoes, add salt and simmer.

    After couple of minutes, add the SIMP and continue frying. This takes about 10 mints to get cooked.

    You can start with 2 tsp of oil and then slowly add the rest.

    When the aloo is almost 3/4th cooked, remove the lid and cook on open.

    Enjoy with Pudina Sadam or any of the Mixed Variety Rice.
