Veg Tehri or Tahiri Recipe or Allahabadi Tehri Recipe is an easy one pot meal made with rice and vegetables. This rice dish is from Allahabad, Utter Pradesh from the popular Awadhi cuisine.
A variant to Biryani, this can be prepared with different vegetables like potatoes, carrots, cauliflower, peas and carrot. To make it more nutritious, I have added soya chunks as well.
This Allahabad ki Tehri goes by different names like Tehri, Tahri, Tehri, Tehari or Tayari and is a yellow Rice dish. I have just about so many biryani versions already shared. During the lockdown days when just the thought on what to cook was so scary, I decided I would just make these one pot meals for better management. Even thinking of those days is scary, however dishes like these made up the whole day stuck at home.
I was inspired by Vaishali's recipe and read that in this Allahabad ki Tehri, the rice is cooked along with vegetables, whole spices, spice powders and yogurt. Mostly cooked in just ghee, it surely tastes simply too good to serve by itself.

Ingredients
We use Basmati Rice to prepare this dish along with a mix of seasonal vegetables. To make it more nutritious, I have added soya chunks as well.
For Spices, we use whole spices and spice powders as well.
On the whole, you don't have to plan much to make this version of biryani.
Instructions
This one pot meal is very quick to make and so healthy to make. Make your weekday lunch hassle free by planning this rice dish.
In a large nonstick pan, add 3 tablespoon Ghee.
When it becomes hot, add all whole spices and saute well.
Next add ginger-garlic paste along with green chilies.
Sauté till the raw smell goes away.
Now add the vegetables, turmeric powder, red chili powder, coriander powder, cumin powder and salt. Sauté for a minute or two.
Add the washed, soaked drained rice.
Cook for a few minutes and then add the curds.
Combine everything well, and add 3 cups water.
Cook on full flame for 5 minutes until it starts to boil and then simmer with lid covered.
Cook on low flame for 15 minutes or until the water is all absorbed.
Drizzle some ghee before serving.
Substitutions & Variations
You can use any seasonal vegetables you like. Since we use a pan to cook this rice, we can directly saute the vegetables before adding the rice.
Soak the rice for at least 20 minutes for cooking it well.
Though only a mix of vegetables are added, I have added soya chunks.

For Rice
- 1.5 cups Basmati Rice
- 4 tablespoon Ghee
- 1/2 tsp Turmeric Powder
- 1 teaspoon Garlic paste
- 1 teaspoon Ginger paste
- 2 Green Chilies chopped fine
- 1 teaspoon Coriander Powder
- 1 teaspoon Red Chili Powder
- 1 teaspoon Cumin Powder
- Salt to taste
- 1/2 cup Curds/ Yogurt
Whole Spices used
- 2 Bay Leaves
- 1 teaspoon Cumin Seeds
- 1 Star Anise
- 3-4 Cloves
- 1- inch Cinnamon
- Few Peppercorns
- 1 Black Cardamom
- 2 Green Cardamom
Vegetables used
- 1 Potato cubed
- 1/2 cup Cauliflower florets
- 1/4 cup Beans
- 1/4 cup Carrots cubed
