Clean and chop carrots to small pieces. Chop Onions, Tomatoes.
Heat oil in a pressure cooker, add cloves, cinnamon, cardamon. Saute for a minute. Then add finely chopped onions. Saute till it changes colour.
Next add Ginger garlic paste. Combine everything well.
Now add finely chopped tomatoes, salt and turmeric powder. When the tomatoes turn mushy, add red chilli powder, coriander powder. Cook on high flame and simmer for 5 mins till the oil comes out.
Then add diced carrots, fry for few mins.
Grind the coconut to a smooth paste using water. Add to the simmering gravy. Add required amount of water. Combine everything, adjust spice if required. Cover with lid and pressure cook it for 2 to 3 whistles.
Remover and cook if excess water. Add garam masala, garnish with Coriander leaves.
Serve hot with Crispy Dosa or Kal Dosa.
