Ingredients

  • 1 cup Carrot
  • 1 cup Onions finely chopped
  • 1 cup Tomatoes
  • 1 tsp Ginger Garlic paste
  • 1 tsp Red Chilli powder
  • 1 tsp Coriander Powder
  • A pinch Turmeric powder
  • 3 Cloves
  • 1 inch Cinnamon
  • 1 Cardamom
  • 1 tbsp Cooking Oil
  • 2 tbsp Coconut paste
  • Few Spigs Coriander Leaves
  • Salt to taste

Instructions

  • Clean and chop carrots to small pieces. Chop Onions, Tomatoes.
  • Heat oil in a pressure cooker, add cloves, cinnamon, cardamon. Saute for a minute. Then add finely chopped onions. Saute till it changes colour.
  • Next add Ginger garlic paste. Combine everything well.
  • Now add finely chopped tomatoes, salt and turmeric powder. When the tomatoes turn mushy, add red chilli powder, coriander powder. Cook on high flame and simmer for 5 mins till the oil comes out.
  • Then add diced carrots, fry for few mins.
  • Grind the coconut to a smooth paste using water. Add to the simmering gravy. Add required amount of water. Combine everything, adjust spice if required. Cover with lid and pressure cook it for 2 to 3 whistles.
  • Remover and cook if excess water. Add garam masala, garnish with Coriander leaves.
  • Serve hot with Crispy Dosa or Kal Dosa.
