Mutton Roast ~ Andhra Style

Ingredients

  • 2 tsp Ghee
  • 1 tsp Cooking Oil
  • 1 cup Onions finely chopped
  • 1 tsp Ginger Garlic paste
  • 250 gms Mutton
  • 2 tsp Red Chilli powder
  • 2 tsp Coriander Powder
  • Salt to taste
  • 1/4 tsp Turmeric powder
  • 1/2 cup Tomato puree
  • 1 cup Mutton Stock
  • Handful Coriander Leaves

Spice Powder to be ground

  • 5 Cashews
  • 1 tsp Peppercorn
  • 2 to 3 Cloves
  • 1 tsp Cumin Powder
  • 1 inch Cinnamon
  • 1/2 tsp Fenugreek Seeds
  • 1 tsp Coriander Seeds

Instructions

Spice Powder to be ground

  • Dry roast all the ingredients and grind to a fine powder.

For the Roaste

  • Wash and pressure cook the mutton with enough water with salt and a pinch of turmeric powder for 3 to 4 whistles. Once the pressure falls, drain the mutton and save the stock.
  • Heat a kadai with ghee and oil, add the onions and saute well.
  • Add the ginger garlic paste and fry well.
  • Now add the boiled mutton and combine well.
  • Add the red chili powder, coriander powder, salt and turmeric powder. Cook on high flame for 5 to 7 mins until the meat gets well coated.
  • Once the meat is well coated, add a cup of the mutton stock and bring to a boil and cook till the water evaporates.
  • Add the ground spice powder and cook on low flame till the meat is well done.
  • Sprinkle the coriander leaves and serve as side dish.
