Ingredients

  • 2 cups Basmati Rice
  • 1/2 Onions julienne
  • 1.5 cup Onions minced
  • 1 cup Green Peas parboiled
  • 1/2 tsp Ginger Garlic paste
  • 3 long Green Chilies
  • Handful Mint Leaves
  • 2 tbsp Cooking Oil
  • 1/2 cup Cashew Nuts
  • 2 tbsp Ghee

Whole Spices

  • 1 long Bay Leaf
  • 2 medium Marati Mogga
  • 1/2 tsp Cumin Seeds
  • 1 Anise Star
  • 2 Cloves
  • 1 inch Cinnamon
  • 2 Cardamom
  • Salt to taste

Instructions

  • Wash and soak the basmati rice for 15 - 20 mins.
  • In a non stick pan, heat the oil, add all the whole spices and saute well.
  • Then add the onion julienne, chopped green chilies, mint leaves and saute well till the onions turn colour.
  • Next add the minced onions. ginger garlic paste and saute well till everything gets cooked.
  • Now add fresh peas and saute.
  • Add the drained rice and combine everything well.
  • Add 3 cups of water and bring to boil. Then simmer and cook with lid covered till the rice is cooked well.
  • Now roast the whole cashews in ghee and pour over the cooked rice and give it a stir.
