Ingredients

For the Boil

  • 1 cup Toor Dal
  • 50 gms Carrot
  • 50 gms Beans
  • A Pinch Turmeric powder

Making the Sambar

  • 1 tsp Whole Spice Blend for Sambar
  • Handful Curry Leaves
  • 4 Cloves Garlic
  • 100 gms Shallots / Sambar Onions
  • 2 tsp Sambar powder
  • 2 medium Tomatoes
  • 2 tsp Tamarind Extract about a small lemon size
  • Handful Coriander Leaves
  • 2 tsp Cooking Oil
  • Salt to taste

Instructions

Prep Work

  • Soak tamarind and extract pulp.
  • Chop the vegetables into 1 inch pieces.
  • Soak the shallots and garlic in water for the skin to peel away quickly.

Making the Sambar

  • In a pressure cooker, take the dal, turmeric powder, and twice the water.
  • Pressure cook for 3 whistles. Once the pressure falls down, add chopped carrot and Beans.
  • Add water as required and pressure cook for another whistle.
  • In a nonstick pan, heat oil, add the whole spice blend for Sambar. Saute well.
  • Next add the hing, and shallots, curry leaves and saute well.
  • Then add the chopped tomatoes, sambar powder, salt. Simmer till the tomatoes are mushy.
  • Add tamarind extract and continue cooking.
  • Once the oil comes out on the sides, add the cooked dal along with vegetables.
  • Bring to a boil, add water as required.
  • Add coriander leaves and simmer for 5 to 7 mins.
  • Serve with Rice and Arbi Roast.
