In a pressure cooker, take the dal, turmeric powder, and twice the water.
Pressure cook for 3 whistles. Once the pressure falls down, add chopped carrot and Beans.
Add water as required and pressure cook for another whistle.
In a nonstick pan, heat oil, add the whole spice blend for Sambar. Saute well.
Next add the hing, and shallots, curry leaves and saute well.
Then add the chopped tomatoes, sambar powder, salt. Simmer till the tomatoes are mushy.
Add tamarind extract and continue cooking.
Once the oil comes out on the sides, add the cooked dal along with vegetables.
Bring to a boil, add water as required.
Add coriander leaves and simmer for 5 to 7 mins.
Serve with Rice and Arbi Roast.
