    Xacuti Masala Rice is spicy rice made with xacuti masala and mixed vegetables. This is easy rice that can be ahead quickly if you have the masala ready ahead.

    The inspiration for the dish came when I was browsing through Suma’s post and I realized I could do the same masala rice too with the Spice Masala I ground. This dish is more of a fried rice type as you saute the vegetables and mix in the rice.

    Since I had the coconut pulao ready, I used the same rice. Regular plain basmati rice will be fine for this too. And making with plain basmati rice is, even more, simpler if you have the Xacuti Masala ready. In the last edition, I made Xacuti Masala Dosa and Xacuti stuffed Aloo Paratha.

    Coconut Pulao

    How to make Xacuti Masala Rice 1

    Xacuti Rice

    Xacuti Masala Rice

    Ingredients Needed:

    For the Coconut Pulao

    2 cups Basmati Rice
    Salt to taste
    2 cups Water
    2 cups Coconut Milk
    1 Black Stone Flower
    2 Bay Leaf
    4 Cloves
    2 Cardamom
    2 inch Cinnamon
    1 Star Anise
    10 strands Saffron
    2 tsp ghee

    For the Xacuti Masala Rice

    1 cup Coconut Pulao
    1/ 2 cup Onions browned
    1 cup Mixed Vegetables, chopped (Potatoes, beans, carrots, and peas)
    Salt to Taste
    1 /2 tsp Red Chili Powder
    2.5 tsp Xacuti Masala
    Handful Nuts roasted
    2 tsp Cooking Oil

    For the Coconut Pulao

    Wash and soak the rice for 15 mins.
    In a nonstick pan, heat the ghee add all the whole spices, and saute for a few minutes.
    Drain the water and add the rice to the pan and saute well.
    Add the coconut milk, water, and salt. Bring to a boil and simmer with a lid till it gets cooked almost done, add saffron and cover it well again.
    Cook over a tawa for the final cooking of the rice. This makes sure the rice gets cooked well and not get mushy.

    For the Xacuti Masala Rice

    Chop the vegetables and microwave for 10 mins.
    Heat a nonstick pan, add the browned onions and cooked vegetables.
    Add the Xacuti Masala and red chili powder and mix well.
    Next, add the coconut pulao and combine everything well.
    Adjust the spice and garnish with roasted nuts.

    • 2.5 tsp Xacuti Masala
    • Handful Cashew Nuts roasted
    • 2 tsp Cooking Oil
    • Handful Almonds roasted

    Instructions

    For the Coconut Pulao
