- Clean and chop carrots to small pieces. Chop Onions, and Tomatoes. 
- Heat oil in a pressure cooker, add cloves, cinnamon, cardamon. Saute for a minute. Then add finely chopped onions. Saute till it changes colour. 
- Next, add Ginger garlic paste. Combine everything well. 
- Now, add finely chopped tomatoes, salt and turmeric powder. When the tomatoes turn mushy, add red chilli powder, coriander powder. Cook on high flame and simmer for 5 mins till the oil comes out. 
- Then, add diced carrots, fry for few mins.  
- Grind the coconut to a smooth paste using water. Add to the simmering gravy. Add required amount of water. Combine everything, adjust spice if required. Cover with lid and pressure cook it for 2 to 3 whistles. 
- Remover and cook if excess water. Add garam masala, garnish with Coriander leaves. 
- Serve hot with Crispy Dosa or Kal Dosa.
