Wash and soak the basmati rice for 15 - 20 mins.
In a non stick pan, heat the oil, add all the whole spices and saute well.
Then add the onion julienne, chopped green chilies, mint leaves and saute well till the onions turn colour.
Next add the minced onions. ginger garlic paste and saute well till everything gets cooked.
Now add fresh peas and saute.
Add the drained rice and combine everything well.
Add 3 cups of water and bring to boil. Then simmer and cook with lid covered till the rice is cooked well.
Now roast the whole cashews in ghee and pour over the cooked rice and give it a stir.
