Eylanchi | Madakku San from Kerala
Eylanchi is a sweet pancake from Kerala made with All Purpose Flour, Egg filled with a sweet coconut filling.
For the Crepes:
- 1 cup All purpose flour / Maida
- 1/4 cup Rice Flour
- 2 /3 Milk increase if required
- 1 cup Water
- A Pinch Salt
- 1 /2 tsp Baking Soda
For the Filling:
- 1 cup Coconut grated
- 2 tbsp Palm Jaggery regular sugar can also be used.
- 1 tsp Ghee
Assembling the pancake.
Heat a nonstick pan, grease well.
Pour a ladleful of batter and cook on both sides. Keep it aside.
Spread a spoonful of filing in the center and roll over it.
