Gluten Free Vegan Butter Less Banana Sticky Bread

Gluten Free Vegan Butter Less Sticky Banana Bread is as the name says, a sticky cake made with gluten free flours, sweeten with demera and honey.

Ingredients

  • 1/4 cup Almond Meal
  • 1/4 cup Oats Meal
  • 1/4 cup Rice Flour
  • 1/4 cup Buckwheat Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 cup Walnuts
  • 2 tbsp Oats
  • 1/2 cup Banana Puree
  • 1/4 cup Honey
  • 3/4 cup Demara Sugar*

Instructions

  • Dry roast the oats, allow to cool and grind to a smooth flour.
  • Place the almonds on the hot pan for 5 mins, then grind it to a smooth flour.
  • In a bowl, add the ground flour along with rice flour and buckwheat flour.
  • Add the demara sugar and honey, beat well.
  • Add banana puree, oil and combine everything together.
  • Then add baking powder, baking soda.
  • Followed by chopped walnuts and oats
  • Preheat the oven to 185 C
  • Transfer the batter to a loaf pan and bake the cake for 40 mins.

Notes

Check if done, mine was sticky at 40 mins, continued baking for another 10 mins. However the cake was sticky because of the demara sugar, so had to microwave for 3 to 4 mins.
The cake will turn hard once it cools down. And it will be sticky.
*You can add 1/4 cup Demara Sugar, I wasn't sure what made me add 3/4 cup since I actually was thinking about 1/4 cup only. I noting both because if you end up liking that sticky texture Demara gives, you can use that.
