How to make Mango Shrikhand | Aamrakhand Recipe

Mango Shrikhand or Aamrakhand recipe is a dessert prepared with thick yogurt and ripe mangoes. It is a creamy, rich thick curds, mixed with sweet ripe mango topped with nuts.

Ingredients

  • 1 cup Curds / Yogurt
  • 1 cup Mango Pulp
  • 3/4 cup Sugar
  • 1/8 teaspoon Cardamom powder
  • 1 tablespoon Almonds slivered
  • 1 tablespoon Pistachios finely chopped
  • 1/8 teaspoon Saffron

Instructions

  • Take the curds and put it in a muslin cloth, place it in a vessel, cover and let it hang for 6 hours in fridge.
  • Power the sugar to a fine powder. Peel the almonds or you can use as such. Finely chop the pistas.
  • You can either soak the saffron in hot milk or use as such as I have done.
  • Once the curds set and the whey is all separated, add the sugar and beat well till mixed.
  • Wash, dice and extract pulp from the mangoes.
  • Make a fine puree if required and add the mango puree to the curds.
  • Beat everything well, add cardamom, nuts.
  • Refrigerate for couple of hours before serving.
