Masala Vada (also known as paruppu vadai or dal vada) is a popular, crispy South Indian fritter made from soaked chana dal (Bengal gram). These deep fried snack are ground with onions, fennel seeds, and herbs, is a staple street food usually served as an evening snack with tea or coconut chutney.
Soak the Dal: Take 1 cup chana dal, clean, wash for couple of times and soak for about 2 to 3 hours.
Blend Coarsely: Reserve a handful of the soaked dal for later. Grind the rest coarsely with dry red chilies, green chilies and salt without adding water.
Mixing the batter: Remove the coarsely ground batter to a mixing bowl, add finely chopped onions along with chopped coriander leaves, curry leaves, fennel seeds, garlic and ginger if adding and reserved whole dal.
Making the patties: Wet your hands and palm with water, roll the batter into small balls, flatten them into thin patties on your palm or a sheet.
Fry: Deep: Heat Cooking oil in a kadai, once hot, drop the patties carefully and fry in hot oil over a medium flame so the vadas cook evenly and become crispy on the outside.
Once the vadas are golden in colour, drain them into a kitchen towel to remove excess oil. Each batch might approximately take about 5 to 7 mins.
