Munagaku Vepudu

Munagaku Vepudu is a healthy stir fry made with Drumstick leaves with very little oil and with boiled toor dal. The toor dal adds good protein goodness to the stir fry.

Ingredients

  • 2 cups Drumstick Leaves (Munagaku)
  • 2 tsp Cooking Oil
  • 1/4 cup Toor Dal boiled
  • 1 tsp Red Chilli Powder
  • 1/4 tsp Turmeric Powder
  • Salt to taste
  • 4 nos Garlic Cloves
  • 1/2 tsp Mustard Seeds
  • 1/2 tsp Urad Dal
  • Curry Leaves handful

Instructions

How to make Munagaku Vepudu

  • Remove the leaves from the stack. Wash and drain well.
  • Heat a nonstick pan with cooking oil, temper with mustard seeds, urad dal, crushed garlic, curry leaves for couple of minutes.
  • Then, add the drained drumstick leaves, combine well.
  • Cook on high flame for couple mins. Then, add salt and turmeric powder.
  • Simmer and cover with a lid. Cook for 5 mins, frequenlty stirring in between.
  • Then, add red chili powder and mix. Sprinkle little water. Cook for couple of minutes.
  • Finally, add boiled toor dal and mix well.
  • Cover and cook for another 10 mins.
  • The leaves get cooked in its own steam.
