Pulihora | Tamarind Rice

Pulihora or Tamarind Rice is one of the rice dishes that can be prepared as Navratri Prasadam. This variety uses a ground spice powder for enhanced taste.

Ingredients

For the Rice

  • 1 cup Cooked Rice
  • 1/2 cup Tamarind Extract
  • 6 Dry Red Chillies
  • 1 Green Chillies
  • 1 tbsp Bengal Gram / Chana Dal
  • 1 tsp Urud Dal
  • 2 tbsp Ground Nut
  • 1 tsp Mustard Seeds
  • Few Curry Leaves
  • 5 Cashew Nuts
  • A pinch Asafoetida
  • Salt to taste
  • 3 tsp Cooking Oil
  • A pinch Turmeric powder

Spice Mix

  • 3 Dry Red Chillies
  • 1/2 tsp Fenugreek Seeds / Methi Seeds
  • 1 tsp Bengal Gram / Chana Dal
  • 1 tsp Urad dal
  • 1/2 tsp Cumin Seeds
  • 1/2 tsp Pepper Corn

Instructions

For the Spice Mix

  • Dry roast all the ingredients listed and allow to cool. Then grind to a fine powder and keep it aside.

For the Tamarind Paste

  • Soak the tamarind and extract thick pulp.
  • Heat a nonstick pan, add oil and temper with mustard, chana dal, hing, curry leaves, green chilli, ground nuts, cashews and saute for couple of minutes
  • Add the tamarind extract and add to the pan. Add water as required. Add turmeric powder and salt, bring to a boil
  • Cook on high for 10 mins, then simmer till the paste becomes thick.
  • Add the spice powder and mix well.

Making the Rice

  • Have the cooked rice spread for it to become cool.
  • Add this pulihora paste to the mix and mix well.
  • Offer as Neivedyam and partake!
