Ingredients
1teaspoonCoriander Seeds
1teaspoonCumin Seeds
10Dried Red Chilies
1/2cupRoasted Peanutsapprox 100 gms
Salt to taste
Instructions
If you are using raw peanuts, roast them in a dry hot pan until the nuts are roasted.
Remove and allow to cool down. You can roughly remove the skin. Store in an airtight container.
For the Spice powder
Heat a nonstick pan, and add coriander seeds and cumin seeds.
Saute until aromatic. Simmer and add the dried red chilies.
If using roasted peanuts, you can add them once the red chilies turn crisp.
Take all the ingredients in a mixer jar, and pulse it a couple of times.
Mix it well and again grind to an almost coarse powder.
Transfer to an airtight container until used.
Notes
This spice powder can be ground ahead if you are using it for regular cooking.For festival cooking, we make it first thing before starting with the vegetables.
