Masala Macaroni | Desi Pasta Recipe

Masala Macaroni is a typical Indianised way of making macaroni in onion tomato sauce. The taste is desi with very earthly taste and if you are fond of this base, you will love this macaroni.

Ingredients

  • 5 cups Macaroni elbow pasta
  • 2 teaspoon Cooking Oil
  • 1 cup Onion puree
  • 1 cup Tomato puree
  • 1.5 tsp Red Chili Powder
  • 1 teaspoon Coriander Powder
  • Salt to taste
  • 1/4 teaspoon Turmeric Powder
  • Water as required to boil the Macaroni
  • 1/2 cup Water
  • A handful Coriander Leaves finely chopped

Instructions

Boiling the Macaroni

  • In a wide vessel bring the water needed for boiling the Macaroni to a boil.
  • When the water starts rolling boil, add the macaroni and add a few drops of oil so that the macaroni doesn't stick together.
  • Once the macaroni is cooked, takes about 7 to 10 mins depending on the quantity.
  • Drain the water, and immediately add cold water to the macaroni to prevent further cooking.

Making the Onion Tomato Sauce

  • In a wide pan, heat the oil, add the onion puree, and saute well.
  • Next, add the tomato puree and cook on high until the puree is well cooked.
  • Add the salt and spice powders, and cool for 5 to 7 mins on high while you keep stirring it.
  • Add 1/2 cup of water and bring to a boil.

How to make Masala Macaroni

  • When the water starts to boil, add the cooked macaroni and simmer until the macaroni absorbs the water and gets well cooked.
  • Finally, add the coriander leaves.
  • Serve hot.
