Microwave the potato for 5 mins, soak and peel the skin. Mash well.
Heat a nonstick pan with oil, temper with mustard, curry leaves, urad dal, chana dal, cashew nuts.
Next, add the chopped green chilies and onions. Saute well.
Add turmeric powder, salt and the mashed potatoes, cook on high till everything comes together
When the stuffing is thick enough, switch off.
