Thakkali Upma | How to make Tomato Upma

Ingredients

  • 1 cup Semolina / Rava/Sooji
  • 2 tbsp Ghee
  • 2 tsp Cooking Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Urad Dal
  • 1 tsp Chana dal
  • Handful Cashewnuts
  • 1/2 cup Onion finely chopped
  • 1 cup Tomatoes finely chopped
  • 3 to 4 nos Green Chilies
  • 1/2 inch Ginger
  • Handful Curry Leaves
  • Handful Coriander Leaves
  • A Pinch Turmeric Powder
  • 2.5 cups Water
  • Salt to Taste

Instructions

Roasting The Rava

  • Heat a nonstick pan with 1 tbsp ghee, when the pan is hot, add the rava and roast till it slightly changes colour. Remove from pan and keep it aside.

Making the Upma

  • Heat the pan and add the oil, temper with mustard seeds, urad dal, chana dal, cashews. Saute well.
  • Next add chopped ginger, chopped green chillies, curry leaves and finely chopped onions.Saute until the onions are nicely cooked.
  • Now add the finely chopped tomatoes. add salt and turmeric powder. Cook on high for the tomatoes to mash quickly.
  • Add the water and bring to a boil. Simmer and slowly add the roasted rava and mix well.
  • Cover with lid and cook for 5 mins. Remove the lid and add the remaining ghee and continue cooking for another 5 mins with the lid closed.
  • Remove the lid, add chopped coriander leaves and fluff well.
  • Serve hot with coconut chutney.
