Wheat Berries Payasam

Fresh wheat berries are chewy and have a juicy sweet taste. These berries make a delicious kheer cooked in milk and jaggery.

Ingredients

  • 1 cups Wheat Berries
  • 3 cups Milk
  • 1 cup Jaggery
  • 2 tsp Ghee
  • Cashewnuts roasted

Instructions

  • Wash and soak the wheat berries overnight in enough water.
  • Drain and keep it aside.
  • Heat a nonstick pan with ghee and roast the nuts and remove
  • Then add the drained berries and roast well.
  • Add milk and cook in sim till the berries are cooked soft. This takes about 30 mins or so.
  • Melt the jaggery and remove impurities if any.
  • Cook for a few minutes and add the jaggery syrup to the cooked berries.
  • Remove 2 ladles of cooked berries, cool it down and make a puree.
  • Add this back to the pot and add enough milk/water to get a flowing consistency.
  • Add roasted nuts for garnish.
