Carrot Beans Sambar is one of the sambar varieties that’s popular in Tamil Nadu. The sweetness of carrot lends a unique taste to this sambar.
Since this post was many years ago, I decided to redo the same dishes and took new pictures as part of the BM#90, Redo Old posts. I enjoyed making it again as we no longer make this combination of Carrots and Beans in a Sambar as Hubby Dear feels the sambar ends up being sweet. However, I vouch it tastes very good.

For today’s lunch, I made Sambar with Carrot and Beans. I was quite taken aback when my friends expressed surprise on hearing that we make sambar with these two vegetables. I have always remembered Amma making this sambar, quite frequently at our place. And the fry I like with this was, Arbi or colacasia fry/roast. It is called chamagadda in Telugu and cheppankizhangu in Tamil.
Well, I don’t have to extend much in telling the tale of this wonderful Vegetable and my unconditional love for Veggie. Hah, the luxuries of being a spinster and getting spoiled by Mom’s cooking!. I just love the dishes Amma makes from Arbi. Amma never fails to mention to my hubby dear, about my food choices. She used to feel bad that I wasn’t anymore expecting such delicacies or conditions, now that I do my own cooking. But its always a wonderful memory, thinking of the time Amma used to take care in making hot Arbi fry with Sambar for me. I guess everybody misses their childhood and the tales related to it. I try to a greater extent, make sure my daughter has lots to relate later. Hope I am doing the best.
Coming back to this combo, my daughter just loved it the first time I made for her, so I try to make this combo at every opportunity I get. But when we pack it, it loses its texture. Since it was just too long since I had made this, I just went ahead for having this for lunch.

Carrot Beans Sambar ~ Lunch Box Recipes #7
Preparation Time: 10 mins
Cooking Time: 20 mins
For the Boil
1 cup Toor Dal
50 gms Carrot
50 gms Beans
A Pinch Turmeric Powder
Making the Sambar
1 tsp Whole Spice Blend for Sambar
Handful Curry Leaves
4 Cloves Garlic
100 gms Shallots / Sambar Onions
2 tsp Sambar Powder
2 medium Tomatoes
2 tsp Tamarind Extract about a small lemon size
Handful Coriander Leaves
2 tsp Cooking Oil
Salt to Taste
Soak tamarind and extract pulp.
Chop the vegetables into 1 inch pieces.
Soak the shallots and garlic in water for the skin to peel away quickly.
Making the Sambar
In a pressure cooker, take the dal, turmeric powder, and twice the water.
Pressure cook for 3 whistles. Once the pressure falls down, add chopped carrot and Beans.
Add water as required and pressure cook for another whistle.
In a nonstick pan, heat oil, add the whole spice blend for Sambar. Saute well.
Next add the hing, and shallots, curry leaves and saute well.
Then add the chopped tomatoes, sambar powder, salt. Simmer till the tomatoes are mushy.
Add tamarind extract and continue cooking.
Once the oil comes out on the sides, add the cooked dal along with vegetables.
Bring to a boil, add water as required.
Add coriander leaves and simmer for 5 to 7 mins.
Serve with Rice and Arbi Roast.
