Dal Makhani Recipe one of the most popular lentil based recipes from Punjabi cuisine. This dazzling dal is prepared with Whole Black Lentils with a little kidney beans in onion tomato gravy base.
I don't think there is hardly many who will not know of this famous the North Indian Punjabi dish. When eating out in restaurant, if I am not ordering Paneer Butter Masala, it would be Dal Makhani. While Hubby dear hasn't been much fond of Paneer Butter Masala, he loves this Dal Makhani as he used to enjoy this during his stay in Delhi.
So, its been 15 years since my first shared this recipe. Adapted from Chef Sanjeev Kapoor, this is one of our favorite recipes from him. We ensure we follow the recipe and the cooking procedure as consistency for this dal is very important.

Ingredients
For cooking the Beans
1 cup Whole Black Gram / Sabut Urad Dal
2 tbsp Kidney Beans / Rajma
1 inch Ginger, grated
1/2 tsp Red Chilli Powder
For the Gravy
75 gms Butter, unsalted
1 tsp Cumin Seeds
4 - 5 Crushed Garlic
1 cup Onions
1.5 cup Tomato puree
1 tsp Red Chilli Powder
A Pinch Turmeric Powder
1/2 tsp Garam Masala
Salt to taste
1 tsp Red Chili Powder
1/2 cup Fresh Cream
Instructions
For Pressure Cooking
Wash and soak the beans well in enough water overnight or for at least 8 hours.
Once when ready to cook, change the water and take the soaked beans in a pressure cooker.
Add grated ginger along with red chili powder. Pressure cook for at least 4 whistles or until done.
Let the pressure fall down, meanwhile, you can make the gravy.
For the Gravy
Heat a nonstick pan with butter, add cumin seeds, and saute.
Next, add crushed ginger and saute well.
Add finely chopped onions and cook until it turns brown.
Add tomato puree, stir well and add salt, garam masala, and turmeric powder.
Simmer until oil comes out on the sides.
Add boiled dal and bring to a boil after adding enough water as required.
Add red chili powder, and simmer for 10 mins.
Mash with a masher until the dal gets mixed well.
Save 1 tablespoon of cream and add the rest of the cream to the dal, mix, and then simmer for a few minutes.
Remove to the serving bowl, drizzle the saved cream on top, and serve with roti or naan.
