    Mixed Lentil and Fresh Vegetable Salad with Parsley

    I am not very big on Salad, nor do we make it a compulsory part of our menu as per the Salad term goes. Though we always have onions part of our roti meal, dry sautes part of our South Indian Meals. So I don't really go out of the way to make your typical salad as the name goes.
    However Amma has been including these sort of salad in their meals as they have to include different dals and vegetables. Our vegetable supermarket sells parsley, and is quite pricy as well. So when Amma got this, we wanted to ensure we make good use of it. This was one of the salads were we used fresh parsley. It was my first time tasting the herb and it was so crunchy and nice.
    Mixed Lentil and Fresh Vegetable Salad with Parsley
    Ingredients NeededMixed Dried Lentils / Navaratna Dal - 1 cup
    Carrot - 1/4 cup
    Fresh Tomatoes - 1/4 cup
    Onions - 2 tbsp
    Parsley, chopped - 2 tbsp
    Salt a pinch
    Lemon Juice - 2 tsp

    How to make the Salad

    Wash and soak the lentils overnight. Pressure Cook till tender with enough water. If the water is excess, cook in open so that most of the water is evaporated.

    Chop onions, tomatoes and carrots.

    Take the cooked lentils in a bowl, add all the fresh vegetables, Add chopped Parsley and squeeze in fresh lemon juice with salt. Toss and serve
