Cheese Bread Omelette Sandwich is a quick and easy sandwich you can pack for your kids' lunch box and be very assured that it will be enjoyed by them.
I have always talked about the food I pack for my kids' lunch box and most times it turns out to be a tough task as the boys are still very picky eaters. I don't have this problem with Konda these days, however, on the whole planning for their lunch gives me nightmares.
Each year brings in new flavours, new likes, and dislikes. I remember Konda wanted only dosas when she was in the first standard, then it changed to something else. With my twins its been a different story. Each year the choices have become lesser than the previous year.
So to my surprise, even though my choices have become less, I have come across one dish that seems to be a hit with both of them. Of course, Chinnu doesn't eat bread, so its plain omelet for him.
We are starting a new edition BM#106 with the first week being all about packed lunch boxes. For day 1, it's a cheesy bread omelette sandwich that Peddu loves to carry for his lunch.
Cheese Bread Omelette Sandwich
4 nos Bread Slices
2 no Eggs
2 no Cheese Slices
Salt to Taste
Pepper to Taste
Red Chili Flakes
Butter
How to make the Sandwich
Toast the bread on both sides.
Beat the omelette with salt and pepper and grease the pan for making the omelette.
Once the pan is hot, add butter and pour the egg into it. Spread well.
Place the bread over it and simmer till the omelette is done.
Carefully flip it to the other side.
Sprinkle red chili flakes and place the cheese slices over it and close the sandwiches.
Allow to cool a bit and pack it well.

I do not have to pack any lunch boxes , but I can understand your nightmares , specially when the boys are picky . Glad you could find that this cheesy omelette sandwich works well . It surely is a filling snack .

I can very well understand your nightmare as I am going through it with abi and the younger one joined him recently. I have to think for two different types of packed lunch everyday as riddhu is just about three years old.
I feel glad and relieved when abi likes something. So I can understand how happy you must be to pack something of your kids choice.
Coming to the CBO sandwich, its easy and filling. I too make this but I wrap the bread with omelette on both sides. Abi too enjoys this one.

I can relate to your nightmares, I have to pack two lunch boxes with two different kinds of food. My Husband wants Indian food and my little one is complete opposite. I make a different version of this bread omelette. It's similar to French toast. I love your recipe, will make it soon.

Packing lunch box is my biggest nightmare for sure... just making sure they eat and bring back an empty one... and especially with two different tastes, it becomes a headache. I sometimes wish that my elder one would eat eggs, I would have given this sandwich for them at least once a week...

Agree with you packing lunch box for my daughter is nightmare. She will eat one day, other day if you keep the same she will bring it back. Cheesy bread omelette is perfect for any kids. Lovely share

My daughter likes only one or two dishes for her lunch box and so I can relate to the situation. This sandwich definitely makes a wholesome meal for kids who love eggs.
