Chettinad Sauteed Sweet Potato is a dry stir fry made with boiled sweet potatoes in a mix of spices that make it get to just snack on or as a side dish.
Sweet Potatoes are delicious just boiled. We mostly enjoy it as such, though during growing up I remember mixing sugar and enjoying as a snack. These days we simply boil it and eat it for the evening snack.
The first time I got to taste this sauteed sweet potatoes was when my colleague got it and she said in her Chettinad cuisine, it is commonly made this way. I asked for the recipe and it was so simple. Even the dish looks very simple yet the taste was amazing.

Chettinad Sauteed Sweet Potato
Ingredients Needed:
4 nos Sweet Potato
2 tsp Cooking Oil
A Pinch Turmeric Powder
3 to 4 Dry Red Chillies
Salt to Taste
3/4 tsp Red Chilli Powder
1/2 tsp Mustard Powder
1/2 tsp Urad Dal
A Pinch Asofeotida / Hing
Handful Curry Leaves
Wash and pressure cook Sweet Potatoes till almost soft.
Allow to cool.
Chop the sweet potatoes into 1/2 inch circles.
Heat a nonstick pan with oil, temper with rest of the ingredients.
Add the sweet potato and mix well.
Simmer and cook for 5 mins.
Serve hot.

Even we are used to eating boiled sweet potatoes. This one with the tempering looks so good. I am sure the tempering will enhance the sweetness..
