When I decided to make some stuffed pooris like Yellow Pumpkin stuffed pooris, I wanted some easy and simple side dish and what else is better than a potato dish which is easy as well.
I just went about it making it with just basic ingredients and it was quickly done. We felt that the stuffed pooris tasted even better with this served.

No Onion No Tomato Aloo sabzi
How to make the sabzi
Microwave the potatoes and mash roughly.
Heat a nonstick pan with cooking oil, add cumin seeds, hing and green chilies.
Next, add the boiled potatoes and saute in the oil for a couple of mins.
Then, add all the spices and mix well.
Add enough water and bring to a boil. Mash some potato completely into the gravy to give body to the gravy.
Simmer for few mins. Serve with pooris.

- 1 cup Potato boiled and mashed
- 2 Green Chillies split
- 1 tsp Cumin Seeds
- 2 tsp Cooking Oil
- 1/4 tsp Asafoetida / Hing
- 1 tsp Red Chilli Powder
- 1 tsp Coriander Powder
- 1 tsp Cumin Powder
- A Pinch Turmeric Powder
- Salt to taste
- 1/4 tsp Garam Masala
- A Pinch Dry Mango Powder / Amchoor
