    Potato Peas Sprout Sandwich ~ Back to School Recipes

    For today's recipe, I have another one of Konda's lunch box shared. I packed her this sandwich couple of weeks back and she loved it so much. The addition of mint with the aloo makes a great difference to the overall taste. And the sprouts makes it very healthy. I haven't used much of oil or butter, than what's required.

    It's also very quick to make when you have sprouts handy. MW potato hardly takes time. This is not just a kid friendly dish, but for elders as well. Sandwiches are such an easy one to make when you have stuffing ready, especially it's easy to convince kids who like them.

    Potato Peas Sprout Sandwich

    Ingredients Needed:

    Fresh Peas Sprouts - 1 cup
    Potato - 1/2 cup / 1 medium
    Cumin seeds - 1/4 tsp
    Onions - 1 medium
    Green Chilies - 1 medium
    Mint leaves handful
    Red chili powder - 1/2 tsp
    Coriander powder - 1/2 tsp
    Garam Masala - 1/4 tsp
    Salt to taste
    Oil -1 tsp

    Bread Slices for Sandwich
    Butter for cooking

    How to make the sandwich

    Wash and make the peas sprouts.

    When ready to use, change water couple of times. MW potato for 4 mins. Peel skin and mash roughly.

    In a non stick pan, heat oil add cumin seeds, then saute onions. When they start turning colour, add the mint leaves and cook well.

    Next add the peas sprouts, mashed aloo, all the spices and combine everything and cook to a thick consistency.

    For making the Sandwich:

    You can stuff the filling and grill on a toasted bread or you can toast it directly  on stove top.

    Brush the bread with butter, stuff the filling between two bread slices, and toast well till crispy.

    Pack in a aluminum foil for lunch.

      Thats a healthy sandwich, the addition of sporuts makes this sandwich more interesting.
