    Stir Fried Tofu and Vegetable Noodle ~ Easy Bachelor Recipes

    For the final day of third week BM#49, under Cooking for one / Bachelor Cooking, I resorted to simple noodles. I had something else in mind, however ended up making this, as I wanted to use the extra boiled noodles that I had. I wanted to use different vegetables and make them more protein as I was making for myself.This is a simple and quick dish to make if you are keen on having a healthy and quick meal.

    While this is on the way, my mind is not really on to writing much on this as we are all so excited about the meet that will happen during the weekend. So stay tuned for that!

     

     

    Stir Fried Tofu and Vegetable NoodleIngredients Needed:

    Boiled Noodles - 1 cup
    Tofu cubes - 1 cup
    Baby Corns - 1/2 cup
    Green capsicum - 1/2 cup
    Onion, julienne - 1/2 cup
    Soya Sauce as required
    Green Chili sauce - 1 tsp
    Salt to taste
    Pepper to taste
    Garlic, crushed - 1 tsp
    Oil - 2 -3 tsp

    How to make the Noodles

    Boil the noodles as per direction, once done, spread it to dry. Left over noodles are even much better.

    Heat a wok or big kadai with oil, add the onion julienne, saute well, then add baby corn and green capsicum all chopped as julienne. Cook on high, add salt and chili sauce. Combine everything well.

    Next add pepper, tofu, crushed garlic. Stir everything quickly. Now add the boiled noodles. Stir everything quickly, adjust on spice and seasoning.

    Serve hot.

    Notes:

    Leftover noodles work out best for this dish as everything is quickly stirred.
