    Quick and Easy Vegetable Briyani | Easy Rice Recipes

    Time demanded I cook something quick and fast for our lunch. Hubby was away on a trip and for just two of us, we didn't know what to cook. Konda normally eats something for a Sunday lunch, that is if we feed her. As all Sundays, this was no less hectic. We spent most of our energy getting the kids fed and bathed and ready for a nap. But Chinnu refused for a nap and was more interested in playing. Not only that, when he sees Peddu asleep, he will ensure he wakes him too. 
    Both of them have this habit of going and sitting over the other and patting them to sleep, when the other one is fast asleep. So after two minutes, you are sure the other one will get up. So this time, we tried hard to keep him away. And every 5 mins, I was checking on the time, as I had to cook. And I was harping on the fact that they will give me at least a hour or so for cooking. Though all I got in the end was just about half hour, and I felt this mixed rice is the best I could dish up. It came out very well since I cooked in a pan and not a cooker. It almost came closer to the brinji of my dreams!

    Quick Vegetable Biryani
    Ingredients needed:

    Basmati Rice - 1 cup
    Butter - 2 tbsp
    Onions, chopped as julienne - 1 medium
    Tomatoes - 1 medium
    Ginger Garlic paste - 1/2 tsp
    Chilli powder - 3/4 tsp
    Green Chillies - 2 nos
    Turmeric Powder - a pinch
    Mixed Vegetables, chopped - 1 cup (Carrot, Beans Potatoes)
    Bay Leaf - 1
    Cinnamon - 1 inch
    Cloves - 2
    Cardamon - 1
    Coriander Leaves - for garnishing
    Water - 1 & 3/4 cups
    Salt to taste

    Vegetable BiryaniHow to make the Vegetable Biryani:
    Clean and soak Basmati rice for 15 mins in water.
    Heat the butter in a non-stick pan. Add all the whole spices, onions, Green Chillies. Sauté till the onions become brown in colour.
    Then add ginger garlic paste. Fry for 1 min, then add the Vegetables, chopped tomatoes, coriander leaves, salt and chilli powder. Fry for 5 mins with lid covered.
    Then add drained rice and fry gently so that the rice is coated well in butter and at the same it does not get broken
    Add about 1 & 3/4 cup of reserved water in which the rice was soaked. Cook in high for 2 mins, once it starts boiling, sim and cook for 10 mins or till the rice is well cooked.
    Keep it in the vessel for 5 to 10 mins, so that it gets settled down.
    Serve with Onion raita.
