For the second day of Ice Creams, I have the seasonal special for you. With Mangoes being in season and overflowing in the fridge, I can't but make it right. As I have said we mostly never think of cooking any fruits, all of us at home prefer eating as such or as custard. There was never a need to make a dish with it, either we don't like or we want to try something.
Even if one of us doesn't like something, there is always one for whom it's favorite. I can pick and choose the fruits for my family and my kids have their choice. Mango is one fruit that's loved by all at home. So naturally, it never finds itself modified in different forms.
The last time I made different dishes, was for the blog's sake and while everybody liked it, they still said they would prefer to eat it as such. Well, why even take the pains is what I end up thinking. when I made the 2 ingredient Ice cream, I decided I might as well try out other flavors. I had some good options to try out. Though as expected time and tide never wait for one and so time just flew and I was left with no time to execute what I had in mind.
With my elder SIL visiting us, I am even more tied up to just thinking about how I will cook and click. The next two posts are hurried clicks before they find me, of course, they know about my blogs. It's just so funny when you have a house guest and I keep clicking!
Since I had frozen it for longer than expected, the ice cream was really set. Then I decided I would make single-serve so that it's easy to serve everybody. I used muffin silicon molds to freeze individual servings. And it's so easy to remove from a bowl.
I enjoyed clicking the pictures and I especially loved the fresh mint leaves from my pot. It's so refreshing to just puck a fresh leave and enjoy. Small and wonderful pleasures of growing your own herb.
I found the mint to be very refreshing with mangoes and ice creams. So maybe I must seriously try the mint ice cream now.!
Ever since I have been thinking about 3 Ingredient Dishes, I have ended up making dishes with just three main ingredients. It's really fun to experiment with what all we could do with just three ingredients sometimes.

3 Ingredient Mango Ice Cream
Ingredients needed:
- 1/2 cup - 2 Ingredient Ice Cream
- 1 cup - Mango Puree
How to make the Ice Cream:
- Remove the portion you want to make as Mango Ice cream, and using a blender, slightly soften.
- Then add the mango puree and blend well.
- Transfer to silicon muffin molds and freeze till sets.
- Garnish with fresh mango pieces and serve.

Mint chocolate chip is one of my fave ice creams so I definitely suggest including the mint in the ice cream itself. These pics came out so bright and clear also

Such a simple and yummy treat with mango Valli. Lovely clicks too. I like my herb garden too -- I love it when I can walk to the backyard and pick my own greens and herbs, makes me to want to hold on to summer forever.
