    This quick and easy Mango Pudding is a Dessert with no No Gelatin, No Agar-Agar added and made with sweet mangoes and cornflour to set.

    Quick Mango Pudding ~ No Gelatin, No Agar-Agar

    During the Mango season, apart from just eating and enjoying the fruit as such, I also plan for some desserts with it. So I have done different dishes like this 3 Ingredient Homemade Mango Ice Cream or this Mango Yogurt Cream Parfait, apart from a very huge list.

    Ingredients

    Since we are not using gelatin or agar agar, we use cornflour to get the wobbly and pudding texture in this dessert.

    Mango - I always use Banganapalle mangoes and the pulp turns out so sweet. In fact if the pulp is very sweet, we can altogether skip sugar.

    Milk - Milk is used in two parts, first part to make the mango puree and second part in the cornflour slurry.

    Sugar - Add just a little to get the sweet balance. If the mangoes are sweet on their own, you can easily skip it.

    Corn Flour - Cornflour slurry gives this dessert the desired wobbly texture and helps it set.

    Lemon Juice - Add lemon juice to this dessert balance the overall and makes it very delicious. Very little is what you all need to get the right taste.

    Instructions

    This easy Mango Pudding is a recipe where you can get the mango pulp ready and mix in the rest when you are ready.

    How to make Mango Pudding 1

    Peel and get the mango puree ready.
    Add the sugar to the mango puree, take this puree in a sauce pan.
    Add 1.25 cups of milk to the milk and combine well.
    Make a slurry of cornflour with 1/4 cup Milk and make a smooth paste.
    Put the sauce pan on medium flame, keep stirring it well so that the whole mix gets well blended.
    When it starts to boil, cook on 5 minutes until the mixture starts to bubble.

    How to make Mango Pudding 2

    At this stage lower the flame, add the cornflour slurry and quickly mix well to combine everything.
    Continue cooking for 5 more minutes, then remove the pan from flame, add the lemon juice and mix well.
    Add at the very end else milk will curdle.
    Transfer to a greased bowls, cover with cling film and let it cool down.
    Refrigerate for 2 hours.
    Serve chilled.

    Substitutions & Variations

    If you are looking for easy dessert, this version is surely the best. I have noticed that the variety you use also matters as well. I would say Banganapalle and Alphonso would best suit for this pudding.

    If you want to make vegan, you can use coconut milk. However, you should not let it boil as coconut milk will curdle.

    Add mango pieces to the pudding along with nuts if you like.

    Equipment

    We need a sauce pan to boil the mango puree along with setting bowls.

    You can blend this in mixer jar to get a smooth puree.

    Storage

    Mango Puree stays good in fridge for a couple of days. Set pudding stays good for two to three days. Ensure you cover the opening with cling film until serving.

    Expert Tips

    Cook the mango puree on low flame to ensure it doesn't get burnt.

    Make a smooth cornflour slurry and add it to the mixture while you briskly whisk it.

    While the mixture is getting boiled, make sure it gets thick for it to set once it cools down.
