Rajani had made a similar one sandwiched with strawberry jam and said she might not use it next time. Since I had a mango jam with me, I felt I should use it to make this Mango Crumb Cake ~ Vegan & Eggless. I will surely make this again and use a 6 inch to get a higher cake.

Ingredients
This is a typical cake made using fruit puree and jam. So get your ingredients ready so that it becomes easy to make the cake and enjoy!
For the Cake
Flour - I have used All Purpose Flour or Maida for this cake. To get a good crumb, you can replace with 1 tablespoon cornflour.
Leavening Agent - Both Baking Powder and Baking Soda are used as the leavening agent. Always check if your leavening agent is fresh and not old stock.
Sweetener - I have used regular granulated Sugar for this cake. We can always replace half with brown sugar as well.
Mango puree - I have used Banganapalli variety. You can use other varieties as well that are sweet.
Cooking Oil - For the egg replacement, a neural cooking oil is used.
Other ingredient that I have used is the Mango Jam as a sandwich.
For the Crumb topping
We mix the flour along with sugar and oil. Top this over the cake to get the desired crumb topping.
Instructions to bake Mango Crumb Cake ~ Vegan & Eggless
Using fresh mangoes in season gives the best taste to this Mango Crumb Cake Vegan & Eggless cake.
For the Cake
In a bowl, whisk flour, baking soda, baking powder, 1 cup sugar in mixing bowl. Add 1 cup of pureed mango and a half cup of oil.
Using a spatula, fold the ingredients to get a smooth batter.
Fill half the batter onto a greased and lined 8″ cake pan. I added 1/4 cup mango jam. Add the rest of the batter on top of the jam. Try not to get the jam to the edges as it burns because of the high temperature inside the oven.
For the crumb topping on the Mango Crumb Cake ~ Vegan & Eggless,
Mix flour and sugar. Add oil, one teaspoon at a time, and mix until you get the topping to your preference. Put the topping on top of the cake batter and bake in a preheated oven at 185 C for about 45 minutes or until a skewer comes out free of crumbs when inserted in the middle of the cake.
Let the cake cool inside the pan, run a butter knife through the sides of the cake, and carefully take it out of the pan. Slice and serve!
I felt this will make a good high 6 inch round cake. I felt 8 inches was not high enough.
Substitutions & Variations
We can replace half of the flour with wheat flour to make it more healthy or if you are looking to avoid all purpose flour.
Similarly granulated sugar can be replaced with brown sugar or if you are more adventurous, use jaggery.
Instead of Mango Jam as just the layer, you can mix it as well with the batter.
Storage
You can make the puree ahead and stock it for this Vegan Mango Crumb Cake.
This cake will stay good when refrigerated for a couple of days. Since the cake is moist, its best to put it in fridge, slightly warming it before serving.
