    Carrot Burfi or Gajar ki Barfi is yet another quick sweet you can make for festivals. I have used khoya and condensed milk. You can use milk as well, though it is more time consuming. There are so many ways to make this sweet. I kept it simple as I had planned for a list to be done for the festivals.

    So this Carrot Burfi is made with just a cup of grated carrots and I got about 5 to 6 small squares. Of course, making in huge volume takes time and laborious as well. I prefer to keep it to 1 cup always as kids don't eat it and after hubby dear's share, I will still have for my colleagues. As expected this burfi was a hit and I was planning on tweaking the recipe to make into a new one soon.

    The Khoya added to this makes it very rich and addictive. Do try it yourself if you have khoya on hand. Else you can use milk powder along with condensed milk. I might be doing it soon as well!

    Carrot Burfi | How to make Gajar Barfi

    In a nonstick pan, heat the ghee, roast the grated carrots for 5 to 7 mins till it is nicely cooked.
    Add Khoya and powdered sugar, mix well.
    After cooking for a couple of minutes, add the condensed milk and stir to combine it all together.
    Cooking for a couple of minutes for the mix to get thicken.
    Transfer to a greased plate and shape it as a square. If required you can put this in the fridge for 10 to 15 mins to set.
    Cut into squares, garnish with nuts.

    Ingredients

    • 1 cup Carrots grated
    • 1/4 cup Khoya
    • 1/4 cup Sugar powdered
    • 1/4 cup Condensed Milk
    • 2 tsp Ghee

    Instructions
