Carrot Peas Pulao Recipe or this Easy Gajar Matar Pulao is simple and easy pilaf you can plan when you are making a thali and have a rich gravy dish on the side. This pulao is very quick to be assembled.
When I had planned the Rangoli Thali for the Thalis and Spreads Mega BM, I wanted a simple rice dish to pair with the gravies I prepared. So this easy carrot peas pulao was so simple to make.
The focus was to cook dishes highlighting different colours, so I made Beets Raita for Purple,
Colourful Veggie Salad, Chana Aloo Kurma for Yellow, Coriander Paratha - Green, Carrot Peas Pulao - Orange and Green with Curd Rice with Pomegranate and Grapes - White, Green, and Red. Finally to close with Rose Bombay Halwa for Pink.

Step By Step Pictures for making Carrot Peas Pulao Recipe
Wash and soak rice for at least 15 mins.
In a nonstick pan, heat oil and ghee, add the whole spices, onion julienned, and green chilies. Saute for a while, then add ginger garlic paste. saute well
When the onions turn slightly brown, add the peas, grated carrots, salt, and turmeric. Stir-fry well. Leave uncovered. Cook till the vegetables are sauteed.
Drain the rice and add to the pan, combine everything well. Then add water and bring to boil. Cover with the lid and cook on low flame for 10 mins, fluff in between.
Keep a pan over the flame, and this pan over it so that it gets further cooked over heat dum.
Serve hot with a side dish.

Ingredients
- 1 tsp Ghee
- 1 tsp Cooking Oil
- 1 Bay Leaf
- 2-3 Green Chilies
- 3/4 cup Onions julienne
- 2 Cloves
- 1- inch Cinnamon
- 1 Cardamom
- 1 Black Flower Stone
- 1 tsp Ginger Garlic Paste
- 1 cup Carrot grated
- 1 cup Peas
- 2 cups Basmati Rice
- 3 cups Water
- Salt to taste
